The grapes were harvested late in the season and reach the winery when they are half-shriveled.
They are then separated from the entanglement and pressed, then into stainless-steel tanks to start fermentation.
Fermentation lasts only a week and stopped at the desired sugar level by cooling the wine.
The wine was aged in new French oak barrels for a period of 8 months.
